Founded in 1972, “Itosho Main Store” is a specialty restaurant where you can enjoy carefully prepared simmered udon, with no shortcuts taken from ingredient selection to preparation. Particular about using Himi udon and domestically produced offal, the restaurant created “motsu nikomi udon” with the aim of making it a specialty product of Toyama. It continues to serve “motsu nikomi udon” while preserving the flavor from when it first opened.

Its unwaveringly popular menu item is Toyama’s soul food, “motsu nikomi udon.” The key to its flavor lies in the balance of the noodles, broth, and pork offal. The noodles are “Himi udon,” known for their firm bite and elasticity. The broth combines the umami of kelp with four kinds of seafood. Then the “pork offal,” simmered in a special sauce, elevates the dish into a deeply flavorful “motsu nikomi udon.” There are also options such as the “Snack and Beer Set” and “motsu snacks.”

Inside, the restaurant has table seating and counter seats arranged around the kitchen. At the vending machine and souvenir corner in front of “Itosho Main Store,” you can also buy frozen motsu nikomi udon.
