Kimuraya “Kokyo”

An elegant, moist signature sweet from Shonai inspired by Kagami-ike Pond on Mt. Haguro.

Kimuraya, a long-established shop rooted in Tsuruoka, proudly offers Kokyo, a signature sweet of Shonai. It is modeled after an ancient mirror excavated from Kagami-ike Pond on Mt. Haguro, which inspired its name.

The outside has a light, crisp bite, while the inside is wrapped around soft, moist gyuhi rice cake, creating a beautiful harmony of texture on the palate. The special bean paste, perfected through repeated trial and error since the shop’s founding, lets you fully enjoy the rich flavor of adzuki beans while keeping the sweetness restrained. It pairs exceptionally well with green tea and makes an ideal tea-time sweet.

Another appealing point is the lineup, with options ranging from 3 pieces to 36 pieces, making it convenient both for yourself and as a souvenir. Founded in 1887 as Yamagata’s first bakery under the noren of Ginza Kimuraya, Kimuraya brings meticulous dedication to its bean paste, from selecting ingredients to the cooking method, giving the flavor the depth of a long-established shop. Beloved by locals and people returning home alike, it remains a popular confection not to be missed when visiting Shonai.
